Kimchi Lab Tokyo is the first craft kimchi specialty store in Japan that sells various types of kimchi with focus on ingredients and production methods. It is run by Glutton Corporation (Head office: Fukuyama City, Hiroshima Prefecture; Representative Director: Takanobu Tokunaga), which was founded in 1992 as a kimchi specialty shop and currently operates about 15 Yakiniku specialty shops and Korean restaurants mainly in Hiroshima and Tokyo. The first shop specializing in craft kimchi opened on 4 June 2022 (Sat) along Hachiman-dori in Daikanyama, Tokyo.
In recent years, kimchi has been attracting attention as a fermented food that promotes beauty and health, along with the keywords 'Cho Katsu' and 'Kin Katsu'. In launching the new brand 「Kimchi Lab Tokyo」, Glutton has invited food producer Kazuhisa Shirahama (Herman's Table Co., Ltd.), known as a popular contractor in the restaurant industry. More than 100 original kimchi menus were developed, from vegetable kimchi to fruit kimchi, based on the secret Yangnyom that has been improved over the past 30 years.
The brand is produced by Cool Japan TV (Head office: Shibuya-ku, Tokyo; Representative Director: Toshiharu Akamine). It operates a comprehensive planning, production and marketing business in Japan and abroad. The logo, characters and store designs are designed by up-and-coming illustrator and designer Yoshifuku Honoka, who has gained tremendous support from the Z generation through collaborations with a number of popular apparel brands. The visual image is a stylish pop image that overturns the conventional image of kimchi and is appreciated as a gift or souvenir.
